truly, back in the Dutch Manhatta days,
over half the world’s oysters
came from our 350 miles of oyster beds.
Before there were NY pizza or pretzels or bagels
or hot dogs or molten chocolate cakes,
there was the almighty oyster.
On this night, we celebrate the glorious bi-valve.
